Codici Appassimento vein valmib kuivatatud viinamarjadest, mida hoitakse hästi ventileeritud ruumis 4-6 nädalat. Nii valmib kogenud önoloogi Scipione Giuliani käe all maitseküllane ja jõuline kontsentreeritud vein. Aroomis on tunda metsa- ja punaseid marju, kerget appassimento-magusust ja vaadis küpsemisest tulenevaid rösti ning vanilli noote. Veinil on pehmed tanniinid, hea struktuur ning heas tasakaalus kergelt vürtsikas maitse. Intensiivne ja isikupärane vein on sobilik koheselt nautimiseks. See dünaamiline ja modernne vein tõuseb esile teiste Puglia leidude seast. Sisaldab sulfiteid.
